The Singapore University of Technology and Design (SUTD) researchers developed a technique to make milk-based items using direct ink writing (DIW) 3D printing that too at ambient temperature without affecting its temperature responsive nutrients. For 3D printing of foods there are other printing methods such as hot-melt extrusion methods and selective laser sintering (SLS) available. But, the basic issue is that these methods are incompatible with temperature-sensitive nutrients present in specific foods. Like in the milk calcium and protein is present in higher amounts and these nutrients are temperature sensitive, thereby making milk unsuitable for the high temperature-induced 3D printing methods.

In the cold-extrusion, there is a requirement of rheology additives or modifiers to stabilize printed structures and thus, making the use of this practical alternative skeptical. Furthermore, the standardization of these additives is a complicated and cumbersome task. In order to get rid of these limitations is why the researchers changed the ink’s rheological properties and performed DIW 3D printing of milk using cold-extrusion method on milk powders. The milk powders’ concentration allowed creation of 3D-printable milk inks with the help of water to regulate the rheology. Moreover, the intricate and in-depth categorizations of the formulated milk was performed to understand the rheological properties and also to guarantee finest printability.

This new approach is so simple and efficient that it can be used to formulate various nutritious foods that are basically served to patients in hospitals who have to follow a strict diet. Even though cold extrusion may have an impact on the heat-sensitive nutrients yet it offers promising belief in 3D printing visually attractive and nutritionally controlled foods that is customized as per individual needs.
