People scoop up mushrooms so easily that the farmers struggle to keep pace with the growing market. Chester County, roughly a two-hour drive southwest from New York City, is the epicenter of American mushroom development.

Although the most commonly consumed type remains the button mushrooms, Harrison said appetite picks up for specialty types, such as shiitake, crimini and oyster mushrooms.
As per Market Research Store, the global button mushrooms market is projected to be valued at around USD 21 billion by 2026 by analysts at a healthy CAGR of more than 7.5%.
Then there are some unusual mushroom items as an ingredient: mushroom tea, mushroom jerky, and crackers with "shroom." Meanwhile, the "mixed" mushroom burger begins to show up on national menus.
