Researchers from QUT have recently designed a cost-effective, fast, and better method of storing food. The new study published in the journal PLOS One shows the researchers to have used supercomputing technology to investigate the micromechanical behavior of plant tissues and also the behavior of dried or dehydrated biological cells. The researchers believe that studying the behavior, physics, mathematics, and biology of agricultural cell structures could help enhance the food production and quality. The evaluation of cells will help understand the processing of them for preservation, storage or packaging. This new finding has the potential to bring about a change in the future of food drying processes by lowering costs, standard food processing, longer shelf-life of foods, and high energy conservation.
Study shows the effect of mechanical forces on the plant cells. The influence of computational simulations on dried plant cells shows variations in their micromechanical behavior. It the basic reason behind the researchers looking for new innovations for food drying processes. The cell study will help use plant cells for biomedical and human cosmetic uses. The latest findings in this study could possibly help develop new designs for industrial drying of vegetables, fruits, and other biological materials. Furthermore, the drying process when carried under strict conditions such as temperature, pressure, humidity and processing speed showed the dried cells to also possess the best nutritional value as the fresh cells.
However, it has been seen that in extreme dryness levels the cells tend to get damaged to a great extent even without any processing. The vulnerability of cells to high forces or pressure while processing is found to cause cuts. Thus, food processing needs to be carried out with great care. At present, there is still more study required to better understand the harvesting and processing under extreme conditions.
